Our story begins with co-founders and longtime friends Chef Eric Greenspan and Alan Leavitt. Eric, an acclaimed chef with accolades ranging from Iron Chef America Winner, and James Beard Finalist to authoring The Great Grilled Cheese Book, has spent over 25 years perfecting the art of comfort food. Meanwhile, Alan grew up in rural Connecticut, surrounded by fresh dairy and big dreams, eventually carving a path as an entrepreneur with a passion for crafting better products.
Together, they set out to create a cheese that doesn’t just taste great—it sets a new standard. After five years of meticulous research and development, New School was born. We swapped artificial fillers and preservatives for aged cheddar, real cream, and butter, crafting a product that melts like a dream and tastes like fine cheese.
