New School Egg Bites
New School Quality American Cheese

Ingredients
- 4 large eggs
- 1 cup egg whites
- ½ cup cottage cheese
- 4 oz. shredded New School American Cheese
- ½ cup cooked turkey sausage or bacon, chopped, optional
- 2 tablespoons chopped chives
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Cooking spray
Directions
Preheat the oven: Preheat the oven to 325°F. Lightly coat 8 cups of a muffin tin with cooking spray.
Blend the base: Add the eggs, egg whites, cottage cheese, salt, and black pepper to a blender. Blend until smooth.
Add the good stuff: Divide the shredded New School American Cheese, cooked sausage or bacon, if using, and chives evenly among the prepared muffin cups.
Fill the cups: Pour the egg mixture evenly over the fillings, filling each cup about three-quarters full.
Bake: Bake for 20–25 minutes, or until the egg bites are just set in the center.
Cool: Let the egg bites rest for about 5 minutes before removing them from the pan.
Serve: Enjoy warm or refrigerate for an easy grab-and-go breakfast.
