Classic New School Grilled Cheese

Sometimes the classics don’t need much. Buttery sourdough, golden and crisp on the outside, with plenty of New School American Cheese melting in the middle.

Ingredients
- 2 slices sourdough bread
- 3–4 slices New School American Cheese
- 2 tablespoons unsalted butter, softened
Directions
Build the sandwich: Place the New School American Cheese evenly between the two slices of sourdough.
Butter the bread: Spread 1 tablespoon of butter evenly over the outside of each slice, making sure to go all the way to the edges.
Start the grill: Heat a skillet over medium-low heat. Add the sandwich and cook until the bottom is golden brown and crisp, about 3–4 minutes.
Flip and finish: Carefully flip the sandwich and continue cooking until the second side is golden brown and the cheese is completely melted, another 3–4 minutes.
Make sure it’s melty: If the bread is browned before the cheese is fully melted, reduce the heat to low and cover the pan for 30–60 seconds.
Serve: Remove from the skillet, let rest for a minute, then slice in half and serve immediately.
