A family-favorite weeknight casserole, made with New School. Seasoned beef and vegetables in a creamy New School American Cheese sauce, topped with a crispy layer of golden tater tots.
Cheesy Tot Casserole

Ingredients

  • 1 pound lean ground beef
  • 1 small yellow onion, diced
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups frozen mixed vegetables, thawed
  • 1 cup half-and-half
  • 12 oz. shredded New School American Cheese, divided
  • 1 (32 oz.) bag frozen tater tots

Directions

  1. Preheat the oven: Preheat the oven to 400°F.

  2. Cook the beef: In a large skillet over medium-high heat, cook the ground beef and onion until the beef is browned and the onion is soft. Drain any excess fat, then season with garlic powder, salt, and black pepper.

  3. Add the vegetables: Stir in the mixed vegetables and cook for 2–3 minutes, until warmed through.

  4. Make it melty: Reduce the heat to medium-low. Add the half-and-half and warm until steaming, then stir in 8 oz. of New School American Cheese until the sauce is smooth and coats everything.

  5. Build the casserole: Transfer the mixture to a 9-by-13-inch baking dish. Sprinkle with the remaining 4 oz. of cheese, then arrange the tater tots in an even layer over the top.

  6. Bake: Bake for 30–35 minutes, until the tots are golden and crisp and the filling is bubbling around the edges.

  7. Serve: Let rest for 5 minutes before scooping and serving.
